I think it's a built in natural instinct; at least in certain breeds. I have two pits & a 6mo retriever/belgium mix. All of them seem to naturally place themselves between members of our family & potential avenues of attack.
This trait seems to be something that is naturally present. I certainly didn't need to train it into them.
