Good people do not need laws to tell them to act responsibly, while bad people will find a way around laws. Plato
It's very hit or miss as far as who is/isn't posted. I haven't been up there since the change in restaurant carry. Unfortunately, it seems since the decision to allow it, many businesses have posted in knee jerk fashion per their right.
Even our local sites haven't caught up with every area yet.

All Day I Dream About Sigs
We just got back from the smokies a couple weeks ago and that place was AWESOME! I could have stayed in there all day by itself.
A lot of places are posted no firearm's allowed. Bennet's BBQ didn't have a sign until you got inside to the hostess. Even the trails in Cade's Cove are posted.
Interestingly enough though we got woken up by a nice black bear on our cabin's porch, most are scared of humans, but be armed just in case!
Ripley's Aquarium in Gatlinburg was probably my favorite place we went to. There are also cavern tours (forbidden caverns) in Townsend that are great as well as Cades Cove in Townsend.
The downside is everything is pretty expensive...And if your the water enjoying type go to River Rat in Townsend and tube the river all day, family section and adventure section.
If your doing a drive all over TN, there is a huge two building aquarium in Chattanooga. Took the girl there last year, not much in the way of shopping, but, the Salt/Fresh aquariums were AWESOME. I wouldve had no idea that sea turtles get bigger than me...or Michael Jordan for that matter...

Couple years ago me and my wife made a motorcycle trip to that area. No problems anywhere we went. DollyWood was fine too.

Go out to eat at The Alamo. They might have one in Pigeon Forge, but I ate at the one in Gatlinburg. They really do have the best steaks! Looks like you can carry in restaurants that serve alcohol now too.
The Smoky Mountains were awesome! I carried everywhere except the visitor centers. They might have signs posted on trails, but those are apparently old and outdated and don't need to be followed (according to a TN resident I'd seen post on here about OCing with no problem on the trails).
Have a fun and safe vacation! Wish I could go back...I need a vacation again, even though I was just in the Smokies in April.

One Warning: The Gulf Coast Vacationers are swarming Pigeon Forge / Gatlinburg. Get your rooms in Sevierville Tn. it adjoins Pigeon Forge and the roooms are musch cheaper!
That was probably me, you are allowed to carry in the mountains now as long as you have a valid permit.
You should have a great time up there, just be careful where you park. My friend was there a few months ago and his truck was broken into. They took everything! He was parked at his hotel and it wasn't even late at night.

Be sure to drive the Tail of the Dragron. I think it is highway 129. There is a stretch of road that has something like 318 curves in 11 miles!! I have traveled on my motorcycle out there 2 times now and it is awesome!! I have a cruiser style motorcycle and the foot pegs scrape the road on almost every curve!!!
