Even during Katrina or the LA riots after the Rodney King debacle, there were only a few dozen rounds fired in self defense, and not all by one person.
I think you'll be fine. I plan on stocking up myself - but based on expected price hikes/taxes on ammo - not some doomsday preparation.
Some disaster won't likely wipe you out. Several will.

I have 100 rounds of defense and 200 range for my Ruger P90. I plan to try to get another 200 or 300 range. I just picked up a P3AT and plan to get 100 defense and 200 or 300 range. I have 50 rounds 00 for my H&R Pardner 18" 12 gauge. I'll probably get another 50. That's way more than I can afford since I'm retired and fixed income. Trying to do some part time work to feed this new addiction. Well, new sorta. Just getting back into it after about 20 years.

Because I can't find a source of 250 gr!
Now that I will start casting, I just ordered enough lead for 7,500 pistol rounds, I have brass for 17,000, powder for 5,000 and short on primers with only 3,000.
Rifle over 2K rounds, pistol rounds some 1,500 and some 300 for shotgun...

otherwise Id say at least 5000 for every firearm you own and you've got enough to withstand a few wars if you're careful.
How much is enough? Enough to survive the unexpected encounter(s). How much is that? Dunno. All I know is: it's more than the thousands of rounds that I've got.

This question is a bit like asking a billionaire how much money is enough. The guy will still be out working to make more; it never is enough.
A more realistic question is what amount is adequate for reasonable realistic stuff that might actually happen.
Day to day home defense and practice: a few hundred rounds in each caliber you use.
For moderate SHTF where there is still a government in place making some effort to restore order, a couple of thousand rounds.
For the big time post nuclear SHTF; one is all you need.
I have something on the order of 50-60K rounds of ammo for pistol, rifle and shotgun, much of it in still in spam cans. Its not anywhere near enough!

I have purchased 2000ea of virgin brass, 8lbs of powder, and 2000ea bullets, for every caliber I shoot (except my .32).
I keep about 500 rounds loaded, and when I shoot. I replenish my supplies the same day.
Yeah, I'm anal about it...

150 12g shells and quite a few .22lr. i should be ok for a small zombie
attack. after that i guess i'l start throwing shoes and boots or whatever

I think if you're going to shoot it all, having a few thousand isn't a bad idea.
I have 150 for the 40, 200 for the 45, 200 for the AR. I rarely get to practice so this is fine for me plus a box of defensive ammo for each.
More ammo than this would go bad before I use it all up.
If I need more than that, then the po-po or an army must be after me and my guns and I doubt any amount of ammo will be enough to keep me alive long enough to stop them.
