Keep it simple, Winchester or Remington premium buffered buckshot.
If a 2 3/4" gun buy the 2 3/4" magnums. # 1 buck = 20 .30 cal pellets, 00 buck = 12 .33 cal pellets.
If a 3" gun buy the 3" buffered buckshot. # 1 buck = 24 .30 cal pellets, 00 buck = 15 .33 cal pellets

#1 buckshot is a great choice - will penetrate the required FBI minimum of 12", and gives you more pellets per shell than 00 buck. However, it is more difficult to find - I ordered mine online.
Buffered shot has a filler in the shell that protects the shot as it goes down the barrel, to help keep the shot from getting deformed as they bump into each other. This helps with both patterns and penetration, especially at longer range. At typical in-home defensive distances, I don't think it makes a difference.

Here is a good previous discussion on buckshot: 00 Buck Penetration, though it goes well beyond merely 00 Buck and penetration of it.
Yes. #1 buck is my favorite choice, as well. Patterns better than #00, some studies suggest it hits as hard as #00 but causes a larger wound channel.
Of all the various 12ga shells I have tried for my defensive shotgun, #1 buck in (the now-discontinued) Winchester Super-X Magnum 2-3/4" shells. 16 pellets, 1250 fps, great pattern that is fairly tightly grouped around the center.

For most purposes, the choice between brands is moot.
Look for the words "buck" and "shot" on the box. You want any major brand.
Chose the one that shoots best in your gun.
Shoot a LOT of it and get to know how it patterns at what distance, how it kicks and if it's reliable in your gun.
Then buy a lot of it to stock up.
At 10 yards my Winchester Ranger low recoil 00 buck will pattern great in a silhouette target
