G26 here too. Added Crimson Trace laser grip due to poor eyesight; I can't focus on the target AND the regular sights at the same time. The CT greatly improves my speed and accuracy.
Glock 30. Installed the extended slide lock lever. The stock one was to small for my fumble thumb. And painted the white sights Dayglo Orange if that matters.

The number of people killed because they didn't have "enough gun" is dwarfed by those who had none at all. Get a gun you will always carry, and add more capability as you grow.
Regarding a 1911 as an Every Day Carry...you should shoot it enough to know what exact modifications you either want or need.
You may ultimately not need or want any modifications at all.
My carry 1911s are all modified pretty much identically.
For me the necessary modifications are as follows:
Milled Short trigger, flat mainspring housing, modified to old style Thumb Safety, Commander style rowell hammer, Ed Brown beavertail, no Full Length Guide Rods, upgraded magazines (usually Tripp Cobramags)
Then I have some other parts upgraded as a matter of preference but, not really necessary.
Slide stop, mag release, sear and all pins upgraded to EGW (Evolution Gun Works).
Titanium mainspring cap & Titanium hammer strut, "fit" firing pin stop and a Millennium extractor.
Put night sights; just that.

My G19 has TFO's, "-" connector, NY1 spring, and a G34 slide stop.
My new PM9 will have Big Dot sights, but I don't consider sights a modification.
When my EDC was one of my two Kimber CDP's...no modifications.
Now my EDC is a Glock-36, and all I did was to put Trijicon night sights on it...nothing else.

Added CTC grips, changed sights to front tritium and rear plain, stipple everything plastic
Limbsavers a good cleaning and range time. I like to keep it simple.
I'm in the process of modifying my Glock 27 but some of parts haven't come yet and my other carry weapons are stock.
So far whats arrived and installed

Ameriglo front sight
3.5lb Scherer trigger connector bar
Full size Glock smooth faced trigger
Glock 45/10mm Mag release
1-10rd (Glock +1)
2- 15rd Glock 22 mags
I might add a Laser max guide rod and maybe extended slide release.
Or I might get a laser grip for the GP100

Sig Sauer P228 - Trijicon Night Sights, nothing else
2 Kel-Tec P-3ATs (one is for my wife) added crimson trace lasers on both.
