If you're facing a regiment of NVA regulars, you'd be undergunned with an M2 machine gun.
If you're just going about your daily business and not deliberately heading into harm's way, I'd say you are well-equipped for a defensive emergency. You carry a spare magazine, right?
Your Officer's Model is no more an antique than my Kimber equivalent of a Lightweight Commander. Carry on in confidence.
Few other pistols and the .45ACP round have been around since 1911 and still remain as high in popularity as ever - simply because they are highly reliable and do the job they were intended to do (stopping people at close range) arguably as good or better than any other handgun caliber. Even though you can now get an 8-round magazine (preferably only from Colt), you don't need a magazine full of pop-tarts if you stay practiced enough to score a hit with each .45ACP round from your tried and time-proven workhorse.

But really, most situations are over after about 3-4 shots being fired.

Glib remarks aside, I think only you can decide whether you are under-gunned. There will always be those who say that anything less than X number of rounds is suicide. And, frankly, I can’t think of a self defense situation where one CAN have too much ammunition.
If, after an honest and objective review of your own, personal, risk exposure, you feel comfortable with seven rounds, you are good to go. If not, well then, you may need to rethink your handgun choice. The trick is to be honest with yourself in your risk assessment.
We'd have to know more about your daily life to answer that question. What kind of neighborhood do you live in? What kinds of places do you frequent? You're the only one that knows what kinds of risks your lifestyle presents, and even then it's a law of averages kind of guess.
I don't see too many stories of CHL holders lying in the street having gone to slide lock once, let alone twice.
Bottom line: Only you can make this decision.
