Today, I feel like:
a 2" S&W 640-1;
a Browning Hi Power, a MKIII model setup for 40 & 9X19 with suppressors; and
a good AR 223 with different top ends.

Kinda feels like cheating but I like the way you think!!!

Would have to go with Ruger SR-22R for light game, ease of use, ammo stockpile ability.
Definitely 12 gauge Mossberg 500 special purpose persuader with the 20" barrel and 7+1 cap. and wide range of available ammo for any different reason, bird shot, buck shot, slugs for hunting any animal, self defense or whatever.
The pistol would be the bigger challenge. Glock 17 or 19 would be best route for reliablity and cheap 9mm but after years of no replacement part production, a good ole revolver might be the better option. Less moving parts and all. .357 would give you power plus the option of using two different calibers depending on what you can find (.357 or .38). Smith & Wesson Model 327 holds 8 rounds. Ruger makes a Blackhawk revolver that comes with an exchangeale 9mm cylinder standard to go with the .357. Of course 6 or 8 rounds aint a 15 round Glock but 8 rounds out of a perfectly working revolver is better than none.

For the sake of dreaming...
1. Paraordinance P14 .45
2. Remington 700 SPS tactical with the AAC package/4x16x30 scope (oh wait, I already have one!!)
3. and a Ruger 10/22

I'm being swayed to the logic of those suggesting .357 revolvers.

Three guns to do it all:
Glock 19, concealed carry, home defense. Mine is a Gen 3. It can do it all.
Bolt action .30-06 with a 3-9x40 scope on it, for hunting, meat in the freezer. I have a 1953 Winchester Model 70 .30-06 that will bring down what ever you want out to 500 yards just fine.
Double barreled 12ga. for bird hunting and general close range purposes. I don't have one of these ... yet, but it's on the list.
