The dash number denotes small but important design changes in S&W models. For example, I think around the -4 or -5, the M10 changed to a slightly higher front sight, and around -9 the integral lock appeared. On the Model 19 (K-frame .357 mag), around -5 they no longer pinned the barrel and counterbored the cylinder for the cartridge rim.
Just about any manufacturer changes a dash number or a revision letter with design changes. In aerospace, a dash number represents a "Class 1" change, meaning a change in form, fit or function, and a revision letter change is a "Class 2" or minor change, such as color or location of part numbers.
