How is the accuracy and recoil? Overall impressions?
I do. Recoil is minimal due to the steel frame and accuracy is excellent. I like them. I carry a Glock, but I would not turn my nose up at a cz75 if I had to carry one.

The CZ 75 is one of the most accurate, smoothest shooting 9mms out of the box. Fantastic guns.

I love my 75. Well made, they shoot great and the price is right.
You never hear anyone bad-mouthing a CZ75. They're like the Toyota of 9mm handguns.

Have the compact p - 01, lighter but still handles recoil very well. It's more accurate than I'll prob ever be and all around a fantastic gun.

Solid gun. Shoots just as smooth and accurate as pistols costing twice as much. Easy disassembly/maintenance. The only mod I did to mine was to flatten out the magazine brake so that my mags will drop free. You may also want to get a trigger job since most CZ75s tend to have pretty gritty trigger pulls.
I've had a CZ75b SP-01 for a while now and love it. Great quality, very accurate, and it's been flawless so far in terms of reliability...all sorts of ammo through it with no problems.
CZ 75b SAO - One of my absolute favorite 9mm handguns. It is a heavy gun. If you are looking at one for carry and are sensitive to weight, I would suggest one of the polymer variants or even the 2075 RAMI.
Anyway you look at it, though, CZ's are outstanding firearms.

CZ P-01 9mm, here. Back in 2006, I posted a couple of "range reports" that you might find useful: click.
Fairly accurate, very reliable, exceptional ergonomics (at least for my hands), easy on the hands during extended shooting (even with hot ammo loads). Fairly good resale value if you ever choose to sell it. Highly recommended.
If you've not yet owned a CZ 75 series pistol, I think you'll be extremely happy with one.

The problem is finding one. I am looking for the matte stainless 75b and nobody online seems to have them in stock.
Is the CZ safe to carry in condition one? If it is, does the small safety make it unfeasible to do so? Are larger thumb safeties available if needed?

While you CAN carry it cocked and locked, I find it not as ergonomic to work the safety as say a 1911 or a Hi Power. Besides, the CZ has a super smooth (at least mine does) DA pull...to the point that I prefer to carry it hammer down and avoid even having to mess with the safety.
