What are all the barrel lengths available?

Off the top of my head, 3-inch, 5 1/2-inch, and 6-inch were common. John Jovino may have sold some limited editions with shorter barrels but can't be certain of that. Don't know what's in the current Smith & Wesson catalog.
Sure is a good way to do big-bore revolvers, the .45 ACP.

I just bought a 625 Performance Center model and it has a 4in barrel. The gun is AWESOME.
...a stainless 2 or 3" 6 shot round butt .45 ACP would be the cat's meow!!! Iron sights...not adjustable...
i have a 3" full-shroud 625 with Eagle Secret Service grips, and a 4" Performance Center 625 like jeephipwr, with a beautiful set of Craig Spegel Cocobolo Boot Grips.
i use Kramer holsters for the 3" (a Belt Scabbard OWB, and a Thomas Perfectionist IWB), and a custom-made Northwest Tactical kydex holster (OWB, straight-drop) for the 4".
5" model 625's were more common before IDPA restricted barrel lengths to 4". 4" full-shroud and Mountain Gun versions (thin barrel, half-shroud, 4") 625's were made, but are hard to find in .45ACP. they are easier to find in .45Colt.
i think that 3" was the shortest barrel 625 made, but i'm not certain about this.
i don't think any 625's (stainless steel) were made with barrels longer than 5", but older blued Smiths (model 25) were made in 4", 6" and 8-3/8" lengths.
i REALLY like my 625's, and i consider a .45ACP wheel gun to be a great, if heavy, carry gun, and LOTS of fun to shoot.
Don't forget about the 2 3/4" Nightguard (discontinued but you can find them with a bit of looking)

The 625 with 4" barrel is an excellent gun. It is a little large and heavy for me to cc. I bought mine for IDPA and USPSA. I would love to find a reasonable priced 2 1/2" or 3" but they are hard to come by.

I've got two custom .45acp S&W revolvers, a Behlert 25-2 2.75" and a Krebs 28-2 4". Both are great guns - smooth, accurate, and fun.
Anyone that makes N frame holsters should be able to fix you up with leather, regardless of barrel length. I have a Mernickle holster for my 327NG and it fits my 25-2 just fine.
