VZ does have the micarta grips although they for some reason are not listed on their site - go figure. I have them for a CCO 1911 that C&S made for me. So, yes they do make them. Go to Brownells -Brownells - World's Largest Supplier of Firearm Accessories, Gun Parts and Gunsmithing Tools -they offer the VZ Gator Back micarta grips in an officers standard and an officers slim. Looks like they have both in a blast black canvas and a black paper. I believe the blast black canvas is more of a gray color. Hope this helps!
I have ErgoGrips on my M9 that are pretty slim, and I know they make them for 1911's. Rubber on mine is fairly hard though, and they are stippled, so not 100% sure how your hands will hold up w/o gloves. Go ahead and check em out though.

Whichever thin grips you buy, don't forget you'll need to replace the bushings and screws also. I've got thin Alumagrips on a Kimber Compact and love them. I also have a set of VZ Gatorbacks on a Colt in blasted black canvas. They darken with age and have character.

Wilson Combat sells Officer's size slim grips in both black and brown wood. They are supplied with the thin bushings and screws required to mount them:

Monkey Grips from Larry Davidson, or Grips from MILTAC, actually, I don't think MilTac makes the slimline grips...
And as previously mentioned, the VZ line, I prefer the 320s over the gator backs.
Don't mean to hijack this thread, but I also have been thinking about putting a set of thin grips on my 1911. How difficult is it to install the thin bushings?

Just something wrong about a Kimber with a Wilson logo...
Don't forget a drop of Loctite on the new bushings. Brownells has a very handy screwdriver bit just for bushings, one for standard, and the other for thin ones. They strip very easily.

Try needle-nosed vice grips
Pinch finger
Curse
Bandage finger
Dig through box in garage looking for EZ-Out bit
Finally find EZ-Out bit
Attach EZ-Out bit to drill
Approach 1911 frame and (........Censored........)
Install new bushings, grips, and screws
