Nickle is nice, but won't last nearly as long on an EDC piece as hard chrome, or obviously stainless. I lived in SE Texas for awhile. All my firearms are stainless or poly-over-park coated.
If normal care is taken I don't think you will find any difference between SS and satin nickel finish. All guns will require periodic cleaning and maintenance. With proper care all should give you a long service life. An abused SS will not outlive a cared for blued steel gun. Any CZ that is given normal care will probably outlive the owner.
I have a Stainless CZ. A couple of things to consider are that the slide stop and safety levers are stainless, as opposed to blued/polycoat on the nickel. The Stainless also comes with ambi-safeties and a slightly extended magazine release button, the regular CZ75 does not. I am quite pleased with mine.
