If I were to build a BBQ gun I'd start with a bare frame. Fusion, STI, Caspian, and/or any of the several other custom makers' frame. In carbon steel. (one that I'd think strongly about for this project is a Les Baer heavyweight Monolith frame with an extended dustcover.)
Next, I'd think about getting a longslide top end in Damascus but I'd more likely just get plain-jane carbon steel. I'd ask politely to have the slide sent without serrations or a stirrup cut but all other machining done. I'd have a reputable artist design them and have a local machine shop mill custom one-off serrations into the slide. I'd have the same artist/chop shop do custom checkering on the frame too.
A Kart barrel, match grade bushing, and Novak sights to handle the business end.
Bobbed hammer, beavertail, single side safety (or one of the "low lever" models not made anymore), skeleton trigger and slide release lever should all be in 18K gold plate minimum. The safety should have some tasteful engraving prior to plating. Internals and magazines should be Wilson.
I'd send the frame out for some custom scratching, a couple of small inlays that go along with the custom serrations/checkering, and a very high-polish blue after fitting the slide to the frame.
For this, I'd expect to pay around $5000 if I can get internal parts/mags on sale and have a marginally acceptable BBQ gun for small informal get togethers among very close friends who are emotionally stable and have no need to play "keep up with the Jones'."
I too have been thinking about the same thing.
Only I’m thinking of starting with an Ed Brown 45 Combat commander size 4.25 inch slide, Special operations pistol.
Then accenting it with a custom holster, and grips.
I've always loved the look of a 1911 with a Caspian Arms Damascus slide. Friggin' beautiful to me.
