Two to three for each one. At least one OWB, one IWB , and one for fun..
For the guns I carry I own 4 holsters each: An IWB, an OWB, a shoulder rig and an Uncle Mike's plastic that I use for competition.
For the M85 I just bought I'll probably eventually own 5 because I have to add a pocket holster as well.
Edit: Oops, forgot the Smartcarry rigs... so that's _5_ per carry gun, and _6_ for the M85 when all is said and done...

I have 5 for my Delta Elite!! one see's most of the use though.
For the 4 carry guns I currently use, I have a total of 14 holsters. This includes 3 Milt Sparks, 3 Mitch Rosen, 2 Kramer, 1 Bulman, 1 Ken Null and the rest by other makers.
Of course, I've got a couple dozen others for guns I no longer own.

2 for my Sig (Serpa & Leather IWB) and will have 2 for my 1911C

5 holsters, 1 gun. But of those, they all get used for different specific purposes. I have a PM9 in a CTAC for daily carry. Bianchi Minimalist for when I happen to carry OWB (not often). Two cheap Passport nylon holsters of which one is kept in my glove box and one is kept in my bag (in case I am riding with someone else which is then placed in their glove box) for times when I have had to disarm in order to go somewhere that I cannot legally carry. And lastly a Fobus Paddle holster which has been mounted under my desk, right beside my bed for when I go to sleep. All 5 were originally bought for primary use but I eventually found good uses for them.

I've got several options for each carry gun.
3 per gun, IWB, OWB, and a Fobus paddle for the range and quick trips to the store.
