I know this is in a defensive forum, but I have always liked Case and Buck traditional knives. If you already carry a gun and pepper spray, or haven't been trained in the combative/defensive use of edged weapons you might give the classic American slipjoints a look. Lot to be said for a stockman or a trapper.

The Spyderco Pacific Salt is light and has a rustproof blade. I think the other metal parts are titanium. Perfect for the beach, water activities,etc. You can swim with it! They have a small (Pacific Salt-1)and large (Pacific Salt) version. It also comes in yellow which makes it easier to find if you drop it. Tie it to your clothing when in the water! $55-60.
