    Also, has a "flipper" that (a) gets it into play instantly, and (b) keeps your fingers off the edge.

    ...And you can get some versions at Wallyworld for about $25. Better steel will cost you maybe $65 at an actual knife shop, or the internet.

    I've got a couple of Spyderco Native FRN plain-edge knives (#C41BK). S30V steel, sharp, thicker, durable. They work exceedingly well. Keep away from too many cardboard boxes, though, as they'll dull the blade fairly quickly. Otherwise, decent edge retention. Slight curve to the grip, with an indentation for the forefinger, which assists in keeping the fingers off the blade. Easily and quickly opened one-handed via the thumb.

    A blade that's a tad over 3", if that matters in your state. Though, Spyderco makes other similar knives that have shorter blades, if this is a crucial factor.

    Highly recommended.

    A Benchmade Mini-Griptilian might fit the bill. Around $80. Available in stainless or (via Cabelas) in D2 steel.
