You might try Paladin press, they have all sorts of books and videos

"Understand", as in, work on, or be familiar with it's history? Jerry Kunhausen's shop manuals are pretty much the 1911 Bible. If you search his name, you may find them for less than $25 each(there are 2 volumes).
As far as history, I believe there was a "History of the Colt 1911", basically by Colt (corporate), but there are tons of books out there.

M1911.org is a great reference site. They also have a BB/message board similar to this one, but dedicated mainly to the 1911.
I hit up that site once in a great moon just to see what is going on there.

I learned a lot from the two volumes (one is updated and different in many ways) of the "The Gun Digest Book of the 1911" by Patrick Sweeney. He explains everything: accessories, operation, care, parts, mechanics, modern history of the gun's use. Found them both at my friendly neighborhood Barne's and Noble, didn't even have to order them.

and the gun digest of the 1911 2 books are about all ya need to get started .. theres a few worth buying other wise some arent ive read most i can find if ya wanna ask before ya buy do so someone has prebley read it and can tell ya nay or ya
