I like "1100 1001"
It was a Star Trek episode.

I'd go with his initials and the date you plan on giving him the gun. So AAA-MMDDYYYY or something like that

I would go with his initials and date of birth.

IF i were getting a 1911 with a custom serial number i would want something meaningful to me such as my birthdate, or a combination of your name and his (or consider using part of your last name). Or if you or he were in the service I would consider using a military id number.

I gave a couple of cute answers earlier, but seriously, it is a very nice thing you are doing. It should be sentimental or something he would like. I would have
"Isaiah 6:8-Send Me" if it were mine.
Is there a bible passage or religous text that would be appropriate?

If it were me, I'd go with my above suggestion - that's what I would want. I say that because some day he'll look back showing it to his grandkids and they'll ask him, "When did you get that gun grandpa?" and instead of replying with, "Ohhh...let me think about it, Ah hell I can't remember", he'll be able to say, "Well it's right here on the serial number".
