"Kelly's Heros" features a lot of detailed footage of the M4 Sherman maneuvering and "in action," perhaps more than any other film. An improbable but gratifying scene has the Shermans sneaking into a German controlled rail yard from out of a rail tunnel.

all the above are worthy posts... but from a purely self defensive shooting perspective, the Tom Cruise briefcase scene in Collateral posted by the original poster, motojoe is tops!
Perfectly executed two against one armed robbery response. Step aside off the line of attack while simultaneously slapping assailants gun away from your body with your non-dominant hand, as you simultaneously draw and fire two center mass from retention position on the armed aggressor, then immediately go to a supported two handed aimed Mozambique to the second assailant who was attempting to draw his weapon.
Of course the final "coup de grau" on the first robber after he was down, was overkill and would likely get you into trouble but it played well on the movie screen.
It takes guts and finely honed level of committed training to perform at that level, but there's no doubt it can be done.
I saw video of the extensive amount of gun training Tom went through in prep for the movie. He was no amateur out there. The training he had showed well.

What, no votes for Sergeant York, with the "turkey shoot" in the trenches? (@ 1:20 in the clip.) Of course, that one was a bit one-sided.
+1 for the final scene in Butch Cassidy and the Sundance Kid. One of the most memorable movie moments ever, gunfight or no.
... and for an off-topic plug for that movie, I will never forget watching the duo jump off a cliff into the Colorado(?) river somewhere in the middle of the movie. One of my favorite stunt moments of all time (and I have a lot of them).

+1 for Collateral and the lobby scene in the Matrix. Very unrealistic but highly enjoyable.
The "Collateral" stolen briefcase scene is my overall favorite....
The final gun battle in True Romance was awesome.
