My thought is that it would be the same as any other citizen. Except for being careful to stay out of the way of any potential backup the officer might receive.
Asking the officer if he needs help is where you start. If he or she says yes, then do so. The situation will dictate how, and whether or not you will need to draw. If they are knocked out, and cannot respond, If AOJ is present, then drawing and firing would be acceptable
This is on top of my list of ways to get accidentally shot by the police. So, while I would not stand by and watch anyone get gunned down, this situation requires extra, extra caution.
That being said be VERY VERY aware that the act of doing so has clarified your choice of sides and could very well identify you as a new target if the assailant takes offense to the odds of his success changing.
Be ready to not only assist the officer but possibly fend off an attack on yourself.
If subject is unconscious then implied consent is used and you do what you can.
Understand that another responding officer is NOT going to know that you are the good guy and likely you standing over an officer with a gun is a very tricky situation.
I'll wait to be asked, unless he's in grave danger of being killed or mamed without intervention.
