    Possum And Sweet Potatos Recipe

    1 opossum (about 2 1/2 pounds)
    2 1/2 tsp. salt
    Pepper to taste
    Flour
    1/2 cup water
    4 medium sweet potatoes
    2 tbsp. sugar

    Trim excess fat from opossum and discard. Wash quickly inside and out with warm water; drain thoroughly. Rub salt and pepper well into the opossum inside and out. Sprinkle inside and out with flour. Lay the opossum on its back in a roasting pan.

    Add water, cover and bake in 350 degree F. oven until about half done (45 - 60 minutes). Split peeled potatoes in half lengthwise and place in pan around opossum. Add more water if needed. Cover sliced potatoes and opossum and cook 30 more minutes

    Had one stuck in my garage for a few days. I thought there were rats out there so I put out some DCon Mouse-Pruf and then I ended up coming out shortly thereafter and came face to face with it. Well, okay shin to face. But anyway, we ended up opening the garage door and then shooing him out with a broom. The hissing and baring of teeth, and since we hadn't experienced that at all, was a bit unnerving. Fortunately we never saw him, or any evidence of others, again.

    My grandmamma cooked a possum once.

    It stunk so bad, she had to throw the pot out. Have you really tried that recipe?

    No I haven't.

    Some neighbors of ours, when I was a kid used to have "possum and sweet taters" all the time.
    I tried it ONCE at their house, it was greasy and slimey and after I swallowed it...it was all I could do to keep it down.

    I'm not squeemish about eating wild critters either, I eat alligator, rattlesnake, frog legs, turtle, squirrel, you name it...but possum is off my list, and so is coon.

    I always heard possum should be eaten by two people at a time. That way one could eat while the other watches for cars.

    Just found the possum that I hit with the shovel. Glad he came out of the hole to die. It appears I really got him good. That's 4 total.
