I made a salmon steak this way last weekend. I used good olive oil and Old Bay Seasoning. It came out beautifully.

I'm not a great cook but I do ok. Here's an easy recipe that everyone really likes. I love crock pot recipes so I have a lot of good ones.
Chicken Tortilla Soup
4 Cups water
2 large boneless chicken breasts
Simmer chicken in water for about 20 minutes…remove and shred (don’t throw out the water)
Return shredded chicken to water and add:
2 Tbsp. chicken bouillon (low sodium)
2 tsp. McCormick’s Fajita seasoning
1 med chopped onion
1 large (28 oz) can crushed tomatoes
1 can (15 oz) white corn
1 can (4 oz) chopped green chilies
1 shake crushed red pepper
2 Tbsp. fresh chopped cilantro
1 1/2 Cups moderately crushed tortilla chips
Cook in crock pot on low for about 2 hours.
This recipe makes about 4-5 servings.
I double it to make a full crock pot.
Serve with extra crushed tortilla chips and sour cream if desired

Nice story. We were in Cozumel for Christmas (ahhhh...) and I wanted to hit a tour, but was outvoted so we merely imbibed. I picked up a good bottle at duty free, not so good you have to go to Confession for making a margarita with it, but very drinkable on its own.
Mother-in-law coming for dinner tonight. Either braising some beef short ribs in red wine or doing a roast over wood. She's not picky, it's me that can't decide whuch I want to make more!
