    I can do the meatloaf, but would much rather have a big bowl of navy bean soup, seasoned with ham hocks, pan of fried potatoes and cornbread.

    I was a cook in the Air Force, and meatloaf taught me several universal truths:

    1. Everyone loves meatloaf;
    2. Everyone loves MOM's meatloaf;
    3. MOM's is the only way to make meatloaf;
    4. All other meatloaf is fine, but it's not MOM's.

    My favorite girlfriend will make a big batch of the base, roll it into large meatballs,cook then freeze in large ziplocks. Hungry pull out three, meatloaf like add barbeque, italian...boil the pasta and heat up the marinara.... comfort food either way in 15 minutes. Last batch made 85 balls

    It was delicious, and yes - there were mashed potatoes to be had as well!

    Was there something else going on tonight?

    Our local Lions Club always has a pancake supper on election day. Ummmmm, good. Just got home, stuffed full of pancakes. Oh yeah, I love meatloaf and mashed potatoes too. Whip it up myself.

    It all sounds wonderful but I am alone without recipes...
