Here is a link to the Texas handgun laws. I don't know about the specific localities but, gun laws are pretty consistent across the state.

My wife and I are looking at purchasing a home in Anna, Texas.
Does anyone here know the what laws/restrictions there are in Anna as far as shooting clays or plinking on one's own property?
Two of the homes we're looking at sit on more than an acre and have nothing but open field behind them.
The same question goes for Princeton, Texas as well. We're looking at a place there too.

That appears to be related more to handguns. What I'd like to figure out is if I can shoot within city limits in Anna or not. In Dallas and it's surrounding suburbs, even shooting a pellet gun can get you fined. But this isn't so in many of the smaller more rural towns outside of the suburbs. I just want to know from someone in the area what the case may be in Anna.
Anna has a City Hall, so I assume they are a formal, incorporated city (see link below for insight). As such, discharging guns within the city limits, such as on your own land, won't be legal. This isn't a local law issue, but state, as I recall.
The same would go for Princeton.
You need to buy property in the country, outside of city limits.
