The website in Chooie's post looks really good. I'm going to be buying some for hurricane or other disaster preparedness. A couple of months' supply, at least.

Mountain House has some good freeze dried products. The eggs taste good and have a good texture. You just add hot water, no cooking required. The number 10 cans have a very long shelf life. We keep Mountain House on hand for hurricanes, etc. So far we have enjoyed everything we have bought from them.

Here's a little "powdered eggs" story from my past.

As a youth, my favorite shopping place was the local Army/Navy store; a real one not, the fake junk stores nowadays. One of my purchases was a batch of surplus powdered eggs. Great stuff! Or so I thought. Turns out my WWII Seabee dad had eaten his fill of them in the service and told me in no uncertain terms to get rid of them. Mom decided to cook them up and feed them to my dog. "It will give him a nice, shiny coat"--as if the dog cared. The "aroma" filled the house, caused Dad to heave and gag and curl up in a fetal posion on the kitchem floor. The dog, who ate everything, turned his nose up and walked away.

Dad ended up going camping for the weekend while the house aired out. That was the end of powdered eggs in our household!

    True story!

Egg processing for long term storage has really improved these days.

And the Canned Pre-cooked Bacon is actually really edible also.

Mountain House has some really good tasting eggs in their breakfast pouches.

You can also buy freeze dried eggs in large #10 cans which have great long term storage dates.

Go to Ebay and search Freeze Dried Eggs.

I have been dehydrating and vacuum bagging things for several years now.
I have not tried to do eggs yet, it is on my list, but some of the other things that I have dehydrated and bagged turned out great even two or three years later. Chili Mac, spaghetti, stew all can be dehydrated and then vac bagged and stored. I will also pull out a random sample cook and eat it just to check for integrity.
Even though some vacuum machines can be a little pricey, it can be used for other things besides food, important documents, cash/gold, even small boxes of ammunition to be hid here and there.

That should be enough eggs to last the rest of your life.
