    What should I serve?

    We're having guests for dinner on Saturday and I'm cooking. I've got the menu down to two choices, and I can't decide which way to go.

    Option 1: Rib-eye steak, Asparagus with Hollandaise Sauce, and Risotto.
    Option 2: Fillet Mignon with Cognac Cream Sauce, Sauteed Vegetable Mix (Asparagus, Carrots, and Baby Onions), and Risotto.

    I'm leaning a little more toward option 2 right now, but that's mainly because I had Rib-eye last week...

    Is there an airport near Clayton, N.C.? Looks like we've got enough forum members planning to attend that we could book a Charter Flight.

    Random, I suggest option one, only make your Hollandaise into a Bearnaise sauce with the addition of a tarragon reduction. I will be there to show you how to make it when you PM me with the details and your address.

    And of course I will help serve before WE eat.

    I think it really depends on the quality of the guests you are having. For some, option 2 may be a little over the top.

    Option 1 is best for all around in my opinion.

    Let's see...
    2879 miles... 50 hours drive time... Fuel stops in Bismark and Charleston...
    Maybe I'll just throw a ribeye on the grill in the backyard.

    Either cut would be fine. I prefer not to use too many sauces (some tend to be strong flavored) when serving good cuts of beef as they might overpower the natural flavor of the meat.

    Beef cooked over a good bed of hickory, oak, orange or any suitable wood coals has all the flavor I look for.

    But that is only my opinion.

    I was thinking more along the lines of a porterhouse, baked potato and corn on the cob, all fixed on the grill.
