I am thinking of getting a safe for my Jeep Cherokee instead of keeping my EDC in the locked glovebox. I am looking for suggestions on where I could mount it. It needs to be accessible from the driver's seat so I do not attract any undue attention to myself while I remove the pistol from my IWB holster and lock it away. Thank you.

In a Cherokee there really isn't a good place to mount a COM safe that is out of sight and easy to get at. There isn't room under either of the drivers or passengers seats, and if you have a console in it already there isn't room to get between the console and either of the seats on the sides.
A locking console may be the better choice. That is what I use in my Wrangler. When I had my Cherokee, I just used the console(non locking) and the locks on the doors when I had to which wasn't very often thankfully.

Just remember that shot placement is much more important with what you carry than how big a bang you get with each trigger pull.

You have to search your vehicle for 'odd' places that your CoM will fit.
We used to have a Mini Cooper. I discovered that the panel to change the rear tail light would hold my safe...out of sight and very safe.
Look around your vehicle for 'out of the way areas (trunk, spare tire area, ect.) where someone breaking in or stealing your vehicle would not look.
