In Nevada it does not matter, sign or no sign, if you have a permit it is legal to carry in such a place. It is even legal to drink.

Here in Las Vegas, you can go to a traditional Hooter's restaurant, or you can go the the Hooter's Casino! And as Cowboy Ken said, if it's posted, go on in, the signs mean nothing (if you're spotted for whatever reason, they can ask you to leave, and if you don't, you can be charged with trespassing). And, you can drink, just don't go above 0.10 BAC.
