It will make shiny spots but it wont damage the steel.

Stainless steel is not a surface finish. It is the same material all the way through.
Stainless can always be polished...re-satin finished or re-blasted to put it back exactly the way it looked when it was brand new.

I think a kydex holster will only marginally create a tad more surface wear over a leather holster as long as you keep the inside of the holster clean.

The few kydex holsters I've used didn't damage any of my gun finishes but they tended to leave transfer residue on the high spots of the slide. It's not damaging to the gun, just looks like crap until it's cleaned off. I prefer leather holsters for my guns but there are some good kydex companies out there.

I’ve been using a Kydex IWB holster with a stainless carry gun with a bead-blasted finish on a daily basis for several years. You can see shiny spots on the front of the slide and on the front of the trigger guard at the contact points between the gun and the holster.
