Defensive Knives & Other Weapons Most people that carry a gun also carry a knife or other weapon as a backup. Finding a good blade is often harder than finding a good pistol or revolver.

I ordered it from a company named Knifemaker.com. It was a few bucks cheaper than anywhere else that I could find.

Steve, did you get the sharpener yet and if so, what are your thoughts?

Check out the sharpener from Burke with the dual shaft. I love it.

I did get the sharpener. As soon as I got home, I grabbed all my knives and went to work. I like the sharpener, but it will take some practice to get the blades as sharp as I want them.

I've used the Chef'sChoice 120 for many years. It works on all my knives from kitchen to large hunting and folders. It even cleans up my serated edges on the rear half of some of my Benchmade knives. It will put a shaving edge on everything I've run through it. It has 3 different wheels to sharpen. The first is coarse diamond for working up dull edges, the second is less coarse and a sharper angle and the last set of wheels is for honing the edges. I'm pretty picky on how I sharpen my knives and have many stones some that sell for over $100 but I use the Chef'sChoice 120 the most. After I wore out my first one from 7 years of almost daily use I purchased another one. I guess that is a pretty good selling point.

Yes it will, even with the Sharpmaker.
Be patient.

And when you start getting frustrated, remind yourself again to
Be patient.

Getting the feel for sharpening knives, with no one to teach me except the occasional article found online, took me a number of years!

I now do my sharpening on a Spyderco Ceramic Bench Stone in medium grit, and occasionally I finish off with the Spyderco ProFile. These require freehand sharpening knowhow. I have an old Sharpmaker that never sees any use anymore. The other two aforementioned systems are more versatile.

Will either of these systems work on large, kitchen knives?

The Chef'sChoice 120 sharpens even my biggest kitchen knives to a shaving edge. When I was stationed in Germany one of the things I purchased and brought home was a nice set of German kitchen knives. the Chef'sChoice keeps them like brand new. It will also sharpen a little pocket knife or big ol Buck hunter with the same ease.

I like the Accu-Sharp for keeping knives sharp. Simple, east to use, and inexpensive. www.accusharp.com

Oops, sorry ridurall, hadn't seen your post about the Chef's Choice, I thought the Lansky and Spyderco were the only ones discussed. I'll look into that one, too. Thank you.
