The OP is asking whether or not you would OC or CC given an option of both (or at least that is my take on it), the reason there are more CC answers is that this is primarily a Concealed Carry Forum and the OC Section is relatively new...the bulk of our member ship is concealed carriers that do not often OC or do not OC at all.

There is a time and place for open carry. I would still CC most of the time but OC would have it's advantages in some cases.

The law in MS. is very strange involving OC. I've never been quite able to make it out. The state constitution allows it but this whack job AG has put some sort of clause in saying that...and I'm paraphrasing here...a holster partially conceales the weapon so you have to have a concealed firearms permit!! It's too stupid to believe I know, but there it is. If someone can make heads or tails of it, I'd appreciate letting me know. In the meantime no one dares to open carry that I know of. Were it legal, (beyond any doubt) I think a lot of people would. I would do it depending on the situation I suppose.

I would open carry often and conceil when I thought it wise to do so, would always be dependant on the area/conditions/people/etc

You need one of those contraptions they had a long time ago. The Peacemaker had a bolt or some such that was on the left side of it, fit into a slot on a belt, and was carried without a holster. The demonstration I saw on Wild West Tech, showed you didn't even have to take it off the belt, you could swivel it up and shoot. That's OC, without a holster.

I guess I could use a lanyard like Tuco Ramirez or maybe just carry it around in my hand!

I would carry a nice underfolding AKM slung over my back with 6 extra 30round mags in a pouch. Other days it would be my Mossberg 500 Cruiser and the 50 round bandolier/sling.
